#MasukDapur : Resipi Butterprawn & Yam Basket



 Tak terlambat rasanya kalau nak ucap Selamat Menyambut Ramadhan walaupun masing-masing dah tukar ringtone smart-phone masing-masing kepada lagu "Sesuci Lebaran" atau "Dari Jauh Ku Mohon Maaf" untuk yang tidak dapat pulang beraya. Atau nak lebih terasa, Selamat Menyambut 10 Malam Terakhir dan Mencari Lailatulqadar. Amacam? dah berapa juzuk tadarus quran? 

Bila bulan puasa kembali, perasaan dia bukan macam Alam Ria Cuti Sekolah kembali macam kat TV3 tu. Dia perasaan lain macam sikit. Lagi-lagi bila bukak tv, bukak blog, bukak majalah. Semua nak jadi emosi. Okay, selamat berbuka puasa, eh bukan sekarang tahu, nanti bila dah azan maghrib.



BUTTER PRAWN - Resipi

Butter Prawn Recipe

Recipe:
Ingredients:
250 gm king prawn
3 eggs yolk
1 cup cooking oil
3 spoon butter
2 teaspoon milk
3 cloves of garlic (chopped)
1 chilli (chopped)
Several pieces of curry leaves
White pepper and salt


1. Fry dried king prawn until brown using ½ cup cooking oil.
2. Heat up another ½ cup cooking oil + 3 spoon of butter in a frying pan.
3. Mix eggs yolk (WITHOUT white eggs) with 2 teaspoon of fresh milk.
4. Slowly pour no.3 to no.2 with constantly stirring the oil. Keep stirring until it gets crispy. (tuang telur dr hujung tupperware yg tajam contohnya supaya telur jatuh sikit demi sikit & halus)
5. Put in chopped chilli & garlic and curry leaves with constantly stirring. DON’T STOP stirring them. Put also some salt & white pepper. The frying pan will be full of foam, don’t worry about that ;p
6. Fry until it gets crispy then turn off the heat. Filter off the oil and get the crispy yolk pieces and serve it with the prawn.






YAM BASKET - Resipi

Yam Basket Recipe 
Ingredients: Serves 7

Cooking oil
800g yam (cut into approximately 1/2cm thick and 4cm long straight strips)
1 tsp white pepper
1 tsp corn starch

1 tsp chopped garlic and ginger
200g chicken breast cut into cubes and marinate with 1 tsp five spice powder
100g button mushrooms
2 pieces Shitake mushrooms (soak in hot water until soft and cut into strips)
100g young corn
1 big onion
1 carrot
1 tomato
250ml. water
sugar, salt to taste


Method:
Mix well yam with pepper and corn starch. Heat oil in a wok. Use a 9" diameter metallic sieve, arrange the yam strips. Put another smaller metallic sieve on top of the arranged yam strips. Deep fry until the strips are crispy.

Leave 4 tbsp oil in the wok, fry garlic and ginger, add in the chicken, fry for about 4 minutes, add the water, cover and simmer until chicken is tender. Add button mushroom, Chinese mushrooms, young corn, onions and carrot. Cook for further 5 minutes. Sprinkle pepper and a little sugar. Mix well. Add salt to taste. Pour the chicken mixture into the yam basket. Serve hot.


Atau kalau nak tukar lauk dalam yam basket tu, aku ada resipi lain.



Chili Shrimps In Yam Basket Recipe

Ingredients:
1 lb medium size shrimps (remove shell)
3 tbsp of cooking oil
2 tbsp ground onions
2 tsp of ground chilies
1.5 chopped garlic or chopped ginger
2 tbsp tomato sauce
1.5 tsp chili sauce
1 tsp tamarind mixed with 1/2 pint of water (strain well)
1 tbsp corn flour
1/2 lettuce (cut into thin strips)


Directions:
Heat cooing oil in pan. Put in ground onions, chopped garlic and fry for about 2 minutes. Add in ground chilies and fry the shrimps together with garlic, ginger and onions. Mix in tamarind water, sweet chili sauce, tomato sauce, sugar and fry for 3 minutes. Thicken gravy with corn flour and simmer for 2 to 3 minutes. Put chili shrimps in the yam basket. Serve while hot.

Chicken In Yam Basket Recipe

Ingredients:
8 oz water chestnuts
6 oz chicken meat, cubes
1/2 cup mixed beans
Cooking oil for frying
2 oz cashew nuts, roasted
1 tsp onions, chopped
1 tsp sesame oil
Salt and pepper to taste
1/4 lb button mushrooms, sliced thinly

Directions: Heat 1 tbsp cooking oil in frying pan. Add onion. Fry until soft. Add chicken, salt, pepper and sesame oil. Then put in water chestnuts, mixed beans and button mushrooms. Fry for 3 minutes. Place the chicken mixture into the yam nests. Garnish with cashew nuts. Serve hot.
